What is your favorite restaurant in the area (other than the one where you work) and why?
One of our favorite restaurants would be Hinoki. It is the opposite of Italian cuisine but shares the same quest for freshness and outstanding flavors.
Is there any food you wouldn’t eat as a child that you would eat now?
Living on a farm, we ate pretty much everything, which probably contributed to my love of cooking.
What do you love about the food and beverage industry?
I enjoy the challenge to adapt to palate changes and trends.
Is there a bucket list restaurant you’re dying to try?
Don Alfonso in Sorrento, Italy or Joel Robuchon in Las Vegas
Who or what is your inspiration in the F&B industry?
Icons Alain Ducasse of Louis Quinze in Mont Carlo & Sirio Maccioni of Le Cirque, New York.
Cellphones at the table: is that acceptable in our current climate or bad form?
Cellphones at the table cannot be completely banned. People have everything in their phone, so moderation is the way to go.
If you had to eat Italian or Mexican food every day for the rest of your life, what would you choose?
Italian.
What does hospitality mean to you?
It means you are friendly, genuine. accommodating and understanding of the needs of the guest.
What do you like to make for yourself/family at home?
Grilled fresh whole fish with local vegetables, sea salt & extra virgin olive oil.
If you could choose another career, what would it be?
It would be the same: chef.
